No. Staff see the address, times and notes for the jobs they are on, not your prices or other customers. You can also make roles of your own with exactly the access you choose.

Can each person see their jobs in their own calendar?

Yes. One person's jobs can be subscribed to from Google Calendar, Outlook or Apple Calendar.
